Ingredients

50ml Everleaf Forest

100ml Saicho Darjeeling

Glass & Garnish

Serve in a large wine glass
Garnish with a slice of orange

    Method

    Build all ingredients over cubed or hand-cracked ice in a wine glass.
    Stir gently to combine.
    Garnish with a slice of orange.

      Saicho Highball

      Ingredients

      35ml Japanese blended whisky

      50ml Ginger ale

      100ml Saicho Hojicha

        Glass & Garnish

        Serve in a highball
        Garnish with a lemon peel horse's neck

          Method

          Build all ingredients over a big ice spear or large ice cubes in a highball glass.
          Stir gently to combine.
          Using a vegetable peeler, peel a very long strip of lemon peel.
          Coil the lemon peel from the bottom to the top of the glass around the ice.
          Serve.

            Ingredients

            35ml Oloroso sherry

            1 lemon wedge

            1 orange wedge

            1 pineapple wedge

            10ml Pimento dram

            10ml 1:1 sugar syrup

            50ml Saicho Jasmine

            Glass & Garnish

            Serve in a highball

            Garnish with a pineapple slice, orange wedge and lemon wedge

            Method

            Add the pineapple, lemon and orange to a cocktail shaker and crush with a spoon or muddler or release the juices. Add the sherry and pimento dram, shake and strain over crushed ice in a highball. Top with the Saicho Jasmine, stir to combine, add more crushed ice and garnish.
